Matiz sea salts are produced by Salinas San Vicente. Situated on the southern Atlantic coast of Spain, in the province of Cádiz. San Vicente uses ancient saltpans first established during Roman times. Sprawling out along the Caño de Sancti Petri, a shallow marine channel that winds along the coast, these broad indentations serve as ideal reservoirs to collect and concentrate briny ocean into elegant, flavor-boosting salt. Matiz offers two varieties including flor de sal (also known as fleur de sel)  and virgin smoked salt.

What is flor de sal?

Flor de salt or ‘flower of salt’ is the most highly prized form of sea salt. It is composed of delicate clusters of crystals formed by evaporating seawater. Most sea salt settles on the bottom of the saltpan, but the larger clumps of crystals cling tenuously together and float to the surface forming a crust around the margins of the pan. This flor de sal is delicate and must be harvested by hand with special salt rakes. It has a higher moisture content (up to 10% versus 0.5% in normal sea salt) allowing the clumping of crystals to create beautiful flower-like forms that give this salt its name. This also gives it a unique, multifaceted texture that dances on the tongue.

The superior flavor of flor de sal results from the fact that it is an unrefined salt that hasn’t been stripped of naturally occurring minerals such as calcium, magnesium fluoride, and other trace minerals. These vary depending on the harvest region and influence the salt’s flavor as well as color. Matiz Flor de Sal works beautifully as a finishing salt for all manner of dishes.
