Green Apple, Manchego and Quince Salad

Green Apple Manchego Quince Paste SaladThis simple salad is the surest way to deliciousness with a minimal number of ingredients. Combining a few green apples, some aged Spanish Manchego Cheese, Matiz Quince Paste, and good Spanish Olive Oil, you get a salad that is equal parts sweet and savory, with a bit of sour tang from the apple. Perfect as a starter, or serve in lieu of a cheese course. This recipe is also a great way to use up any remaining bits of quince paste you have lingering in your refrigerator!

Ingredients
  • 2 whole green apples sliced into thin matchsticks
  • 2 ounces Manchego cheese cut into small cubes
  • 1 ounce Quince Paste cut into small cubes
  • 3 tablespoons Spanish olive oil
  • 1/4 teaspoon Matiz Sea Salt Matiz Flor de Sal

  1. In a large bowl, combine cut green apples, cheese and quince paste. Pour olive oil over the mixture and toss gently with your hands. Add the Flor de Sal and toss gently again until the oil is distributed evenly. Serve immediately with a loaf of crusty bread.
