Grilled Manchego Cheese and Matiz Quince Paste Sandwiches

These little sandwiches are a play on the traditional Spanish Manchego cheese and quince paste combination eaten at tapas bars all over Spain. Use a crusty loaf of your favorite bakery bread and toast them until they are a dark golden brown – fantastic as an appetizer or dessert course, or add a salad and call it lunch!

  1. Slice the Manchego and quince paste, estimating about 1 ounce of cheese and about 1/2 ounce of quince per full sandwich.
  2. Heat a skillet to medium-high heat. Slice the bread and generously brush one side of one slice with the olive oil. Place the slice oil-side-down into the hot pan. Layer the cheese and quince onto the bread, and cover with the second piece of bread. Brush the top with olive oil.
  3. Toast to golden brown on each side, allowing the cheese to warm and melt slightly. When done, slice in half and serve immediately.
