Ingredients
  • 1/2 pound spaghetti or other past/noodles
  • 3 tablespoons Spanish olive oil divided
  • 1 cup fresh baby spinach
  • 2 cloves garlic minces
  • 1-2 pinches red pepper flakes
  • 2 tablespoons Italian flat-leaf parsley rough chopped
  • 2 tablesppons capers optional
  • 7-10 each Matiz Boquerones white anchovies, rough chopped
  • 1 tablespoon lemon zest about one lemon
  • 1 tablespoon lemon juice
  • 1/4 teaspoon Matize Sea Salt optional, to use if not using capers

Instructions
  1. Bring a pot of water to boil, then add pasta. While the pasta is cooking, heat a skillet with 2 tablespoons of the extra virgin olive oil and saute the spinach. Once wilted, add the garlic, red pepper flake, parsley and capers (if using), then the anchovies. Saute for a few minutes more.
  2. Remove the mixture from the heat and set aside. Once the pasta is al dente, drain and toss with the mixture in the skillet, adding the lemon zest and juice. Add a bit more of the olive oil if the mixture looks dry. Salt to taste and serve.
