Brussels Sprouts, butternut squash, Matiz Chestnuts Salad

This salad is the epitome of fall, a mixture of olive oil roasted brussels sprouts, squash, tender sweet Spanish chestnuts, salty savory marcona almonds, thick cut bacon, and colorful pomegranate seeds. Serve warm right after the veggies come out of the oven, or roast them ahead of time and toss together right before serving.

  1. Preheat oven to 400 degrees F. Place brussels sprouts and butternut squash onto separate roasting pans.
  2. Pour 2-3 tablespoons Olivar de la Luna Organic Extra Virgin Olive Oil over the squash, and the same amount of oil over the brussels sprouts. Toss to coat evenly and sprinkle with Matiz Flor de Sal. Spread the vegetable evenly on the roasting pan.
  3. Roast each pan for about 20 minutes (less for the squash) or until the vegetables are browned and tender.
  4. While the vegetables are roasting, fry the bacon until crispy and chop into pieces.
  5. Slice the Matiz Organic Chestnuts into halves and put into a large bowl along with half of the seeds from the pomegranate and the Matiz Marcona Almonds.
  6. Place the rest of the ingredients in the bowl and toss lightly. Drizzle a bit more of the olive oil over the salad if it seems dry. Salt to taste.
