Ingredients
  • 1 small bunch Italian flat-leaf parsley
  • 1 tablespoon fresh lemon juice
  • 3 tablespoons Spanish olive oil
  • 1 loaf crusty bakery-style bread may be toasted
  • 1/2 cup sour cream or creme fraiche
  • 2 tins Matiz Sardines

Instructions
  1. Remove the stems from the flat leaf parsley. In a food processor with small bowl attachment, add the parsley, lemon juice and olive oil and blend until completely smooth. Set aside.
  2. Cut the bread into small appetizer-size pieces (you may also toast each piece, but this is optional) and spread each with a few tablespoons of the sour cream or creme fraiche.
  3. Drain the oil from the sardines and place half a sardine on each piece of bread. Place a spoonful of the salsa verde on top of each. Serve immediately.
