These little fritters are one of our new favorite ways to experience Matiz Sardines. Fried in Spanish extra virgin olive oil, these have a meaty texture and rich flavor with a hint of smoky spice and lemon. Serve with Matiz Fiery All i Oli and a few crunchy piparras and you’ll be hooked!

  1. In a medium bowl, mash the sardines with a fork, then add the eggs, pimenton, garlic, parsley, cheese and breadcrumbs and mix together until combined.
  2. In a deep frying pan or cast iron skillet, pour in enough olive oil to completely cover the bottom of the pan. Heat on high until oil is very hot, but not smoking. Form mixture into balls or patties and place into hot oil. Reduce heat to medium-high and fry on all sides until dark golden brown. Serve with Matiz Fiery All I Oli, Matiz Piparras and lemon wedges.
