  1. Mash garlic with a mortar and pestle (or mince very finely and mash with the side of a chef's knife.
  2. In a bowl, mix garlic, 1/4 cup vinegar, aji paste, cumin, salt and pepper. Pour the marinade over the beef and mix well. Leave overnight in refrigerator.
  3. Place the beef onto the skewers (about 4 pieces on each). Make a basting mixture of olive oil, 1/34 cup vinegar and a pinch of cumin.
  4. Basting beef several times during cooking, grill the skewers for about 5 minutes on each side or to desired doneness. Serve with rice and vegetables.
