Ensaladilla Rusa Spicy Tapa

Ensalada Rusa (in Spanish “Russian salad”) is a tapa that is served in bars all over Spain. Usually made with potatoes, piquillos, bonito tuna, eggs, olives and mayonnaise, our version bumps up the flavor using our garlicky and spicy Matiz Fiery All i Oli instead of the typical mayonnaise.

  1. Set a large pot of water to boil, place the potatoes, carrot and eggs into the pot and maintain a low boil. After about 10 minutes, use a fork pierce the carrot to make sure it is cooked through. Remove the carrot, and after another 2-3 minutes, remove the eggs. Then remove the potatoes once they are fork tender. Set aside and allow all to cool.
  2. Once cooled, cut the potato into 1/2 inch cubes, and cut the carrot in brunoise (tiny cubes). Peel the eggs and cut into small pieces, and place all ingredients into a medium bowl.
  3. Dice the piquillos, reserving a few longer slices for garnish. Remove the pits from the olives and dice them, placing them in the bowl with the piquillos and the rest of the ingredients. Drain the tin of bonito tuna and add to mixture.
  4. Pour the olive oil over the mixture and toss lightly, then add the Fiery All i Oli and salt and stir until everything is well coated. Garnish with piquillo strips and serve at room temperature.
