Ingredients
  • 1 bunch Lacinato kale washed and patted dry
  • 1 apple - Pink Lady
  • 1/2 cup Manchego cheese finely grated and loosely packed
  • 1/4 cup nuts or seeds Chopped
  • 2 tablespoons Arvum Sweet Vinegar
  • 2 tablespoons Spanish olive oil Castillo de Canena or Olivar de la Luna

Instructions
  1. Remove the inner rib from each kale stalk and roughly chop or tear the leaves and place in a large bowl.
  2. Chop the apple into medium-sized pieces and place in the bowl along with the cheese, nuts/seeds and vinegar and olive oil.
  3. Toss with tongs or two wooden spoons until the leaves are fully coated with the vinaigrette.
  4. Serve immediately or make days in advance for the best flavor.
